The best VEGAN recipe for chocolate chip cookies I've ever found. I have to credit the book Vegan with a Vengeance for this recipe. Just remember though, vegan does not equal healthy...these cookies are delicious, but not that healthy.

Preheat oven to 350 F.
Cream together the margarine and sugar until fluffy. Add the molasses and vanilla and mix in. Add the flour, baking soda and salt, mix well. Fold in the chocolate chips. Drop by teaspoonfuls spaced a little over 2 inches apart onto ungreased cookie sheets. Bake for 8 - 10 minutes,until ever so slightly browned. let cool on baking sheets for 5 minutes and then transfer to cooling rack.
