Rice pudding with raisins. Marvelous warm . . . just as good chilled.
" I used Arborio rice instead of long grain white rice and cooked it in the milk mixture. Also I had some heavy cream (on hand) , so I used 2 cups of whole milk, one cup each of half/half and heavy cream. Also I soaked the raisins in brandy and mixed into the pudding. COMBINE rice, 1-1/2 cups milk, sugar and salt in heavy saucepan.
COOK over medium heat, stirring occasionally for 15 to 20 minutes until thick and creamy.
BLEND remaining 1/2 cup milk and egg; stir into rice mixture.
STIR in raisins.
COOK an additional 2 minutes, stirring constantly.
STIR in butter and vanilla. Spoon into serving dishes.
Sprinkle with nutmeg or cinnamon, if desired.
Apricot Almond Rice Pudding: During the last 2 minutes of cooking substitute 2/3 cup chopped Sun-Maid California Apricots for raisins and add 1/4 cup slivered toasted almonds.

Ethlb 3 months agoPretty good. Definitely needs the cinnamon and nutmeg for flavor. I also used more sugar to make it a touch sweeter. Easy to make!!!!
KelliAJonesDixon 3 months agoVery yummy! I used dates in place of raisins and a small sache of cardamom spice with the milk in the beginning for a little extra flavor!
MauraSpeckt 6 months agoMy kids are crazy for this pudding but not raisins, so I leave them out. I have to make it every other week as it is or I get questioned! I was delighted with how easy it was to make such a yummy dessert, this recipe is a winner!

Larawaya 1 year agoThis is the only rice pudding recipe I have tried and the only one I make! It tastes so much better than store bought because it is so creamy. I never use raisins (because we never have any!) and it turns out great. If you want extra flavor you can add cinnamon, a little bit of nutmeg, and some brown sugar.

terrilove 2 years agoI always wanted to make rice pudding and this recipe was soo easy and delicious. I used dried apricots and almond extract. I also forgot to add the butter and it was still amazing!
