Rice pudding with raisins. Marvelous warm . . . just as good chilled.

Original recipe makes 4
1 1/2 cupsLong grain rice; cooked
2 cupsMilk; divided
1/3 cupGranulated sugar
1/4 teaspoonSalt
1 largeEgg; beaten
2/3 cupSun Maid natural Raisins
1 tablespoonButter or Marjarine
1/2 teaspoonVanilla extract
Ground nutmeg or cinnamon

Sun Maid Rice Pudding Preparation

COMBINE rice, 1-1/2 cups milk, sugar and salt in heavy saucepan.

COOK over medium heat, stirring occasionally for 15 to 20 minutes until thick and creamy.

BLEND remaining 1/2 cup milk and egg; stir into rice mixture.

STIR in raisins.

COOK an additional 2 minutes, stirring constantly.

STIR in butter and vanilla. Spoon into serving dishes.

Sprinkle with nutmeg or cinnamon, if desired.

Variation:

Apricot Almond Rice Pudding: During the last 2 minutes of cooking substitute 2/3 cup chopped Sun-Maid California Apricots for raisins and add 1/4 cup slivered toasted almonds.

    My kids are crazy for this pudding but not raisins, so I leave them out. I have to make it every other week as it is or I get questioned! I was delighted with how easy it was to make such a yummy dessert, this recipe is a winner!

    I always wanted to make rice pudding and this recipe was soo easy and delicious. I used dried apricots and almond extract. I also forgot to add the butter and it was still amazing!
