Spicy Shrimp & Grits
|1/2 cupquick-cooking grits|
|1/4 cupsmoked sausage; chopped|
|1 cuplow-sodium chicken broth|
|1/2 cupsharp cheddar cheese; shredded|
|1/2 tspOld Bay seasoning|
|4 scallions; sliced thin|
|1/2 tbspcanola oil|
|1/2 medyellow onion; minced|
|1/2 medgreen bell pepper; minced|
|2 clovesGarlic; minced|
|12 medshrimp; peeled & de-veined|
|2 plum tomatoes; chopped|
|Salt & pepper|
Spicy Shrimp & Grits Preparation
Prepare the grits according to package directions, using chicken broth instead of water. When they're cooked, stir in cheese, 3/4 of chopped scallions, & some salt & pepper. Cover
Heat the oil in a medium saute' pan or cast-iron skillet on medium. Add the smoked sausage, onion, pepper, & garlic. Cook until lightly browned, 5 - 7 min. Add shrimp, tomatoes Z& Old Bay seasoning. Cook until the shrimp are pink & firm. Add salt, pepper & hot sauce to taste.
Serve the shrimp over the hot grits & garnish with remaining chopped scallions.
