0. Bake crust at 400 degrees Fahrenheit
1. Wisk together cream, milk, eggs, yolks, and vanilla in medium bowl
2. Combine pumpkin puree, yams, sugar, maple syrum, ginger, cinnamon, nutmeg, and salt in a saucepan and bring to simmer over medium heat (5-7 minutes)
3. Simmer mixture, stirring constantly, and mashing yams until thick and shiny (10-15 minutes)
4. Remove pan from heat and wisk in cream mixture
5. Strain through strainer and press solids through
6. Re-wisk and transfer to warm prebaked pie shell
7. Return to oven and continue baking for 10 minutes
8. Reduce heat to 300 degrees Fahrenheit until edges are set (175 degree Fahrenheit internal temperature) about 20-35 minutes
9. Let cool for 2 to 3 hours
The candied yams (sweet potatoes) compliments the pumpkin flavor while adding a slight sweetness. If overcooked, the mixture will curdle and not be silky smooth.
