This is a filipino dish that my niece turned me on to and my whole family just LOVES it. I serve it with brown rice.

Original recipe makes 6
2 1/2 lbsChicken thighs
1 Onion; chopped
3 clovesGarlic; minced
1 cupVinegar
1 1/2 cupsWater
1 1/2 cupSoy sauce
2 Bay leaves
Pepper; to taste

Chicken Adobo Preparation

Place all ingredients in a pot and simmer until chicken is tender, about 1 hour. Serve hot over cooked rice. It can also be cooked in a crock pot on low setting all day. this easy recipe can be prepared ahead and it freezes well.

    i make mine in a crock pot and use the less sodium soy sauce. i also use way more garlic and add green beans, potatos and boiled eggs. After that i add more water to fill the crock pot. SET IT AND FORGET IT.

    It's okay! It wasn't a spectacular recipe like my mom's or sister-in-law's..it was just ALRIGHT. I substituted white vinegar with apple cider vinegar so it wouldn't be so sour and I also used only a cup of soy sauce instead of a cup and a half. I didn't want it to be too salty either. Next time I'll tweak this recipe a little more by frying the chicken a little in the end before serving on the rice.

    Pretty tasty dish. I used cider vinegar as another reviewer suggested, but might try a different one next time. My husband loved it, but not the kids. Might try it again but in the crockpot.

    This is a very good recipe although it was very salty. It could have been me but I followed the directions exactly. Next time I won't use so much soy sauce.

    The best way to make this is with equal parts of soy sauce & apple cider vinegar, not white. You can add a lil water, but you should already have a lil bit from browning the chicken. Add fresh, chopped ginger, a couple garlic cloves, a tbsp of pickling spice & a dried basil leaf. I like to use boneless chicken thighs or boneless pork

    I really liked this recipe. I used boneless skinless chicken thighs and there was still plenty of flavor. I might try a little less soy sauce next time it seemed just a bit salty. It was still delicious!

    My favorite way to cook this is in the crock pot. The chicken just falls off the bone it is so tender [I posted this recipe.]
