Nuoc Mam (Fish Sauce)

This sauce is used in a lot of vietnamese cuisine. Use a high quality fish saucetry to avoid plastic bottles that smell rancid. The fish sauce should smell fishy and salty, but not rotten.

Ingredients
| Equal parts water; lime juice/vinegar, fish sauce. |
| Sugar; to tastes |
| garlic or garlic chili paste; Freshly minced |
| 1/2 cWater |
| 1/2 cupFreshly squeezed lime juice |
| 1/2 cupFish Sauce |
| 1/3 cSugar |
| 2 clovesgarlic; minced |
| 2 teaspoonsOR garlic chili paste |
Nuoc Mam (Fish Sauce) Preparation
In a medium bowl, combine sugar and liquids. Stir until sugar is dissolved. Add garlic or chili paste. Taste and add more as needed of any ingredient.
You can also add grated carrot or jicama to the finished nuoc mam.
Eat with spring rolls, or vietnamese noodle bowls. Also a nice dressing for salads.
