This is so great, I could eat it by itself as a meal.

"I made this with our Thanksgiving dinner and everyone loved it. I wasn't too keen on the Velveeta Cheese but that's just a taste preference. I will use less next time I make it. I'm also going to try making it with uncooked rice next time. I'll just add water and milk to allow the soup flavor to soak into the rice. I believe that will add a lot of flavor to the rice. I'm giving it 5 stars because of the raves I got from friends and family. I believe one has to like Velveeta cheese to love this recipe though." - 2skittles4u

Original recipe makes 12
1 headbroccoli; cut off stems
1 cancream of celery soup
1 cancream of mushroom soup
1/2 cuponion; diced
2 tablespoonbutter
1 Velveeta; little more than ½ block
6 cupswhite rice , cooked
cheddar cheese; shredded
salt, pepper and garlic salt; to taste

Broccoli, Rice and Cheese Casserole Preparation

In a large pot bring water to a boil and add head of broccoli (enough water to cover), boil till very tender, then drain. In a different pan, sauté onions in butter until soft. Combine broccoli, rice, sautéed onions, cream of celery, cream of mushroom, Velveeta, salt, pepper, and garlic salt to taste. Mix until everything is combined and melted- you can add a little chicken broth or milk if mixture is too thick (baking can dry it out). Put broccoli, rice and cheese mixture into 9x13 baking dish and top with shredded cheddar cheese. Bake at 350° until cheese is melted and slightly browned (about 30 min.)

    I made this for my family and they loved it! Even my husband who doesn't usually like rice. I discovered at the last minute that I was out of milk and it needed some additional liquid as recommended. I substituted half-n-half and it was creamy delicious!

    This recipe made a superior version of an old standard. I'll most definitely be using it again. I do recommend following the suggestion to add some milk to the mixture before putting it in the oven.

    I made this,very good.I added some green peppers and used a can of cheddar soup,and cream of mushroom soup.and made a topping using ritz and butter. Very good

    This was a huge hit in my family as well as at a party I took it to. I added a couple cups of milk to the mixture before I put it into the casserole dish since it was just so thick. Came out amazing!

    I made this for Thanksgiving Dinner and got lots of oohs and awws. I did add 1 teaspoon cayenne pepper and sale to taste. The cayenne simply enhanced the flavor, I did not notice any heat. I do agree about the amount of cheese, perhaps 1/3 of the block would be better.
