I usually double or triple this recipe, because people can't stop eating it. It is not only delicious, it's also a very nice looking salad. Great for taking with you to a party. But be careful - it has a kick!

Combine olive oil, lime juice, cilantro, garlic, hot pepper sauce, cumin and salt in small bowl. Whisk together until blended. Set aside. Combine pasta, beans, tomatoes, red onion, avocado and corn in large bowl. Add dressing and toss gently.

kelchrisc 1 month agoI substituted some salsa with cilantro and cooked that with the black beans, corn, and other ingredients first. I also used vegetable pasta. It smells wonderful and looks very colorful. Once it cools, I will add the avocado. Thumbs up on the taste test.
hungryamzilla 1 month agoIt was good. I didn't use cilantro though. Good to have in the winter when you're in the mood for something light to eat.

jokergod2000 6 months agoDamn this was good. The reviews said it was great but it was better than I expected! I will make it again for sure. I might try it with a bit of cheddar cheese on too.
kyjaxmom 9 months agoI made this for a bbq but I did not put in the pasta instead I added another can of black beans. It was a big hit, some people were eating it with tortilla chips like a dip. Side dish or dip it was a light and delicious item.

brianacardoza 10 months agoThis recipe was amazing. I wasn't sure if I'd like it but I was surprised it had such great favors. I used veggie noodles instead of bowtie. It added more flavor and its healthier
rdavidson55 10 months agoThis salad is addictive once you start eating it I made it ahead and let it cool in refrigerator for several hours. Very easy to make and I think next time I may add some various bell peppers
achrona5 11 month agoFantastic. I added a spoon or two of mayo since we like ours creamy. Also added ripe green olives. Hubby said it hit the spot. Red onion was too spicy for our toddler, but she liked all the rest just fine. Used canned tomatoes with great success.
