Spicy Southwestern Pasta Salad

I usually double or triple this recipe, because people can't stop eating it. It is not only delicious, it's also a very nice looking salad. Great for taking with you to a party. But be careful - it has a kick!

"Terrific. I needed a proteiny vegan dish, so I used quinoa instead of pasta, and even the die-hard carnivore at my table liked it! The seasonings, texture, color--everything about this was wonderful. (I also cheated a bit--not everyone in my family likes super-spicy, so I omitted the hot sauce and put the Texas Pete bottle on the table for anyone who wanted it.) This made it to my "favorites" list; I'm sure I'll make it again."

Ingredients

Salad:
6 ounces bow-tie pasta, cooked; rinsed in cold water and dr
1 can black beans; rinsed and drained
1 pint grape tomatoes; halved
3/4 cup red onion; chopped
1 avocado, ripe; peeled and cubed
1 cup frozen corn; thawed and drained
Dressing:
1/2 cup olive oil
1/3 cup lime juice
1/3 cup fresh cilantro; chopped finely
2 cloves garlic; minced finely
1 tablespoon hot pepper sauce
1 teaspoon ground cumin
1 teaspoon Salt

Original recipe makes 4

Preparation

Combine olive oil, lime juice, cilantro, garlic, hot pepper sauce, cumin and salt in small bowl. Whisk together until blended. Set aside. Combine pasta, beans, tomatoes, red onion, avocado and corn in large bowl. Add dressing and toss gently.

Very easy to prepare and very tasty! However, I doubled the quantity because I wanted to make sure I had left.overs. We ate so much cause it was so good. It makes an excellent covered dish when you need to contribute one.

I won a cook off with this awesome pasta! I did however leave out the tomatoes and avocado and I added some Mrs. Dash table blend and extra cumin and hot sauce!!!

I substituted some salsa with cilantro and cooked that with the black beans, corn, and other ingredients first. I also used vegetable pasta. It smells wonderful and looks very colorful. Once it cools, I will add the avocado. Thumbs up on the taste test.

It was good. I didn't use cilantro though. Good to have in the winter when you're in the mood for something light to eat.

Damn this was good. The reviews said it was great but it was better than I expected! I will make it again for sure. I might try it with a bit of cheddar cheese on too.

I made this for a bbq but I did not put in the pasta instead I added another can of black beans. It was a big hit, some people were eating it with tortilla chips like a dip. Side dish or dip it was a light and delicious item.
