Vegetable Curry Casserole

I'm not proud; I can post this completely unhealthy, unsophisticated casserole. There's not a lot of "stick to your ribs" vegetarian recipes out there, but this is one my two teenage vegetarian sons just devour.

Original recipe makes 6
Casserole:
1 16-oz packageseashell or other pasta; cooked
5 cupsCheddar cheese; shredded
1 large packagefrozen chopped broccoli
Sauce:
1 cancondensed cream of mushroom soup
1.5 cupmayonnaise
2 tbspwater
1 clovegarlic; Minced, to taste
Yellow curry powder
Ground cayenne pepper; to taste

Vegetable Curry Casserole Preparation

Preheat oven to 400.

Mix all sauce ingredients together in a bowl. I use a lot of the garlic, curry and cayenne - about a tablespoon of garlic, and about half a tablespoon each of the curry and cayenne. You'll have to taste the sauce and see how much of the spices you like.

In a greased casserole dish, layer pasta on the bottom, then 4 cups of the cheese, then the broccoli, the sauce, and finally sprinkle the remaining cheese on top.

Bake at 400 degrees for 30 minutes.

I found that 1/2 Tablespoon of Ground Cayenne is way too much heat for this reicipe., I didsense there was a good underlying taste minus the intense heat, and would consider making this again with maybe 1/4 of the Cayenne pepper.

Sometimes instead of the broccoli I will use a mixture of frozen 'southwestern' vegetables and black beans. [I posted this recipe.]
