Original recipe makes 4
2 cupsYellow cornmeal
1 cupAll purpose flour
3 tablespoonsSugar
2 teaspoonsBaking Powder
2 teaspoonsSalt
1/4 cupmilk
2 largeEggs; well beaten
1/3 cupVegetable oil
1 cuponions; Finely chopped
1 cupgreen bell pepper; Finely chopped

Southern Hush Puppies Preparation

Combine cornmeal, flour, sugar, baking powder and salt in a medium sized bowl and stir until throughly blended. Make a well in center of cornmeal mixture and add milk, eggs and 1 1/2 tsp oil into well. Stir dry ingredients into wet ingredients until just moistened. Add onions and peppers and stir until just blended. Pour remaining oil into large skillet over medium heat. Using a tablespoon, form batter into half dollar sized cakes. Fry cakes turning once until golden brown on both sides, about 5 minutes each side. Drain on paper towels. Makes 20 Hush Puppies.
