1 stickorganic butter
1/2 cuporganic raw blue agave
1 fresh organic egg; or egg replacement
1 tspvanilla
1 cupwhole wheat pastry flour
1 1/2 cupsorganic rolled oats
3/4 tspsea salt
3/4 tspbaking powder
1/2 tspbaking soda
1 tspcinnamon
1/2 tspnutmeg; fresh grated
1 cupcarob chips
1 cuporganic walnuts; chopped
1 orange or tangerine fresh juice and rind; grated

Carob Chip Oatmeal and Orange Cookies Preparation

Preheat oven to just under 350F. In a mixing bowl, cream the butter and agave, then beat in egg, vanilla, and orange rind and juice. In another bowl mix together the flour, oats, salt, baking soda, baking powder, nutmeg, and cinnamon. Add to the butter mixture and partially mix. Add the carob chips and walnuts and mix thoroughly. Place by teaspoon on greased or nonstick cookie sheet. Flatten each slightly. Makes about 4 dozen. Bake for 8 minutes or less. (Carob chips will burn if oven is too hot or if baked too long.) Cool on cookie rack.
