Jeane's Sweet Potatoes

Recipes »  Side Dish  »  Vegetables

This is my best friend's mother's recipe. This is a WOW dish that blows guests away, and is requested year after year. The caramels used in the recipe are regular square caramels that you buy at the grocery store - I think Kraft makes some. For pineapple, you can use chunks, or crushed, whatever your preference.

Yield: 6 Servings Ready in 45 minutes

Cuisine: AmericanMain Ingredient: Potatoes

Original recipe makes 6 Servings
1 canSweet potatoes; in juice, drained
1/2 pkCaramel candy
1 canPineapple; drained
1/4 cupPecan; chopped
1/4 cupBrown sugar
1/4 cupButter; chopped
Miniature Marshmallows

Jeane's Sweet Potatoes Preparation

Remove the paper from the caramel candies. Drain the yams and reserve the juice.

Place the yams in a casserole dish. Add the candy, pineapple and pecans, distributing them nicely with the yams. Sprinkle brown sugar over all and dot with butter. Place marshmallows over all.

Bake at 350 for about 30 minutes or until marshmallows have begun to brown.

Notes

Remember that this is going to be very hot because there is a lot of melted sugar.
