Ingredients

1 head cauliflower
1 bunch broccoli
3/4 cup mayonnaise, either light or regular
1 can cream of mushroom soup
3/4 cup sharp cheddar cheese; grated
1 egg; beaten
1 tbsp lemon juice
1 large jar diced pimentos
1/2 cup dry bread crumbs; finely crushed
2 tbsp butter; melted
1/2 cup slivered almonds

Preparation

Steam the cauliflower and broccoli until tender. Cut into bite-sized pieces.

Blend together the mayonnaise, cream of mushroom soup, sharp cheddar cheese, egg, lemon juice and pimentos.

Spoon all of the ingredients into a buttered casserole dish.

Mix the dried bread crumbs and melted butter. Pour over the cauliflower/broccoli mixture. Sprinkle the slivered almonds over the mixture.

Cover casserole dish and bake at 350 degrees for 30 minutes.
