Original recipe makes 6
7 ozself raising flour
1/4 teaspoonbicarbonate of soda
1/2 teaspoonground allspice
6 ozcaster sugar
2 mediumEggs
1 poundbananas; ripe
3 ozmixed nuts; chopped
grated rind of one lemon or orange
4 ozmargarine; soft

English Banana Tea Bread Preparation

Line a 9 x 5 loaf tin with grease proof paper.

Sift the flour, all spices and bicarbonate soda into a medium bowl.

Cream margarine and sugar until light and fluffy then beat in the eggs followed by the flour.

Peel and mash the bananas and add to the mixture wit nuts and fruit rind.

Turn into the tin and level the top with a knife.

Cook in moderate oven 180 gas or mark 4 for about one and quarter hours until well risen and firm to touch.

Turn loaf onto a wire rack to cool.

You can store the loaf in an airtight tin or wrap in foil for 24 hours before eating.

Just keep an eye on cooking time, as it can vary depending on gas or electricity. You can always check if cooked by putting a small knife in the middle and if it come out clean then the tea bread is cooked. [I posted this recipe.]
