Ready in 30 minutes
"Added black beans to the mixture. Used 1/2 of the sauce in the filling and the other half on top of the enchiladas. Family was debating on whether they liked the sauce added on top before cooking (made tortillas softer) or during last few minutes (made tortillas crisper). I added it before but didn't completely cover a few so those were crisper. "- Jldozer
Preheat oven to 350 degrees.
Saute onion and peppers in frying pan.
Add ground beef (you can do this in a separate frying pan, so that you may drain the fat afterwards).
After beef is browned, add tomato sauce and enchilada sauce. Stir all together in pan. Turn off heat.
In a greased baking dish, take the tortillas, add 2 spoonfulls of beef mixtures, add a little shreded cheese, wrap and place seam down in baking dish. Fill baking dish with filled tortillas. Add remaining beef mixture over the top of all wraps.
Bake for 25 minutes, covered.
Uncover, add cheese to top of wraps, bake for additional 5 minutes or until cheese is melted.
Serve with sour cream and olives.

Mamaschaef 1 month agoI make this all the time. My kids love it. I do sub a can of chopped mild green chiles for the green pepper and I add a packet of taco seasoning to the meat. Very quick, easy and tasty

Ceamarie 8 months agoFantastic! We like things hot so changed a few things...instead of green and red peppers used 2 habenero's and 2 jalapeño's. Per someone else suggestion changed to 1 can tomato sauce and 1 8oz can of tomato paste

Keith65 1 year agoVery good, but sauce was very loose to use as filling. Next time, I'm going to hold back on half tomato, and enchilada sauce for filling then add rest of those for topping. Olives would be ok in filling also.
