Beef enchiladas

1 lbground beef
1/2 Green pepper; diced
1/2 red pepper; diced
1 smallonion; diced
16 oztomato sauce
10 ozenchilada sauce
16 ozmexican cheese; shredded
16 ozsour cream
1 packagetortillas
black olives; for garnish (optional)

Beef Enchiladas Preparation

Preheat oven to 350 degrees.

Saute onion and peppers in frying pan.

Add ground beef (you can do this in a separate frying pan, so that you may drain the fat afterwards).

After beef is browned, add tomato sauce and enchilada sauce. Stir all together in pan. Turn off heat.

In a greased baking dish, take the tortillas, add 2 spoonfulls of beef mixtures, add a little shreded cheese, wrap and place seam down in baking dish. Fill baking dish with filled tortillas. Add remaining beef mixture over the top of all wraps.

Bake for 25 minutes, covered.

Uncover, add cheese to top of wraps, bake for additional 5 minutes or until cheese is melted.

Serve with sour cream and olives.

  • I changed up my recipe a little. I added a little tomato sauce and taco sauce to my beef. I also didn't add any meat to my enchilada sauce. I just put the sauce over my beef stuffed soft tacos. This was a crowd pleaser! photo by jessicalemoineburlet jessicalemoineburlet

    Very good, but sauce was very loose to use as filling. Next time, I'm going to hold back on half tomato, and enchilada sauce for filling then add rest of those for topping. Olives would be ok in filling also.

    Really great meal. I didn't have enchilada sauce so just used a packet of taco seasoning. Great make ahead dish.

    I made these enchiladas for the family. They were good, but I think the bell peppers made them a little sweet. I also added some finely chopped zucchini, which gave them a bit of an extra texture. I'd definitely make these again!
