A tasty way to use leftover rice.

"this recipe is very good, instead of stir frying this, i let it sit on one side and cook on med, for about 20 min with out stirring, that way it gets nice and crispy like fried rice should be on one side, its hard not to stir,but its well worth the effort of not, loved this,,, CCheryl,,,,,,,had to give it a photo,,," - CCheryl

Original recipe makes 3
1 tbspoil
2 Eggs; (up to 3), lightly beaten
3 green onions
1 clovegarlic
1 tspfresh ginger; grated
2 cupscooked rice; cold
2 tbspSoy sauce
1/2 cupchicken; shredded, cooked
1/2 cupfrozen peas; thawed

Chicken Fried Rice Preparation

Heat half of the oil and scramble the eggs until thoroughly cooked. Remove from pan and set aside.

Heat the remaining oil and add onions, garlic and ginger. Saute for 30 seconds. Add rice and stir-fry for 2-3 minutes. Add soy sauce, chicken, peas, eggs and season to taste.

Cook for a minute, and serve while hot.

    Yummy! I added salt & pepper, didnt use ginger. I cooked it in a satuee pan and then put a top over it let it cook for 5 minutes! Delicious
