A tasty way to use leftover rice.
"this recipe is very good, instead of stir frying this, i let it sit on one side and cook on med, for about 20 min with out stirring, that way it gets nice and crispy like fried rice should be on one side, its hard not to stir,but its well worth the effort of not, loved this,,, CCheryl,,,,,,,had to give it a photo,,," - CCherylYield: 3 Ready in 15 minutes

Chicken Fried Rice Preparation
Heat half of the oil and scramble the eggs until thoroughly cooked. Remove from pan and set aside.
Heat the remaining oil and add onions, garlic and ginger. Saute for 30 seconds. Add rice and stir-fry for 2-3 minutes. Add soy sauce, chicken, peas, eggs and season to taste.
Cook for a minute, and serve while hot.
