Family loves this recipe. So much that when we went to an authentic chinese restaurant in China Town the kids said they preferred mine! I use frozen peas and carrots and fresh chicken breast as we never seem to have any leftovers. I do use more soy sauce than called for. I just keeping pouring it in until it's covered. I think the oil is one of the key ingredients in this recipe. I've used both peanut and sesame oil but we prefer the sesame oil.
Great base for chicken fried rice! I added celery, carrots, crushed red pepper, and extra garlic. Next time I think I will add one more egg, more chicken, and maybe a sprinkle of salt. Will be my new go to for fried rice in the future!
