Original recipe makes 10
2 poundsground beef
1 mediumyellow onion; diced
1/2 packagebacon

1 cupevaporated milk
1 cupchedder cheese; shredded
1/2 teaspoonSalt

20 ozsweet baby rays original bbq sauce; is best

Bacon, cheese BBQ mini-meaatballs Preparation

In a medium fry pan, cook bacon till crisp. remove and place on paper towels to rid excess bacon fat. Keeping the drippings from the bacon in the pan add the onion and saute for about 5 min, just enough to release the flavor of the onion. Allow the onions and bacon to cool completely. Meanwhile combine the ground beef, oats, cheese, evaporated milk, salt and pepper in a bowl, mix well with hands. When onions and bacon(crumble up the bacon) are cooled add to the mixture. Better to let flavors marinate overnight in the refridgerator in a covered bowl. When ready to bake heat oven to 375, remove mixture from fridge then spray a deep casserole dish with cooking spray(depending on the size of your dish, you may need two or cook them in batches). Begin making mini-meatballs, I make them about 2 tablespoons full big, rolling them between hands and placing them into the casserole dish, once the meatballs are all rolled and in the dish pour over the bbq sauce, and bake for 45min uncovered. allow to cool before eating and serve with toothpicks. (makes about 45 meatballs)

My family loves them! they taste just like a mini bbq bacon cheeseburger!!!!

My family loved this! We made these for family night. Our kids loved making the balls and eating them with toothpick. Will definatly make again.

Maybe a little extra Bacon or seasoning believe it or not the meatballs were slightly bland. But they were all gone at the party!

Only used 1/2 of a small diced onion (my family doesn't care much for onion) and added 1 small jalepeno minced with honey sweet baby Ray BBQ sauce. Very good!
