PEANUT BRITTLE Preparation
ADD SUGAR, CORN SYRUP AND WATER AND PLACE IN A LARGE SAUCEPAN. COOK UNTIL SUGAR DISSOLVES ON A MEDIUM-LOW HEAT, STIRRING CONSTANTLY TO AVOID BURING SUGAR. THE, PLACE A LID AND COOK OVER MEDIUM HEAT FOR 2-3 MINUTES TO WASH DOWN SUGAR CRYSTALS FROM SIDES OF PAN. ADD PEANUTS; COOK, STIR OCCASIONALLY, UNTIL MIXTURE REACHES HARD CRACK STAGE (300) REMOVE FROM HEAT. STIR IN BUTTER, VANILLA, SODA, AND SALT. WORK RAPIDLY AND POUR MIXTURE INTO A BUTTERED 15 X 10 X 1 INCH JELLYROLL PAN; SPREAD IN A THIN LAYER. LET COOK COMPLETELY; BREAK INTO PIECES. STIR IN AN AIRTIGHT CONTAINER. YIELD: ABOUT 2 LBS.
