1 cupLIGHT CORN SYRUP
1/4 cupWater
2 cupsRAW PEANUTS
3 tablespoonsBUTTER; OR MARGARINE
1 teaspoonVANILLA EXTRACT
1 teaspoonBAKING SODA
1/4 teaspoonSalt
1 * CAN ADD JALEPENO PEPERS TO MIX FOR A SPICY BRIT

PEANUT BRITTLE Preparation

ADD SUGAR, CORN SYRUP AND WATER AND PLACE IN A LARGE SAUCEPAN. COOK UNTIL SUGAR DISSOLVES ON A MEDIUM-LOW HEAT, STIRRING CONSTANTLY TO AVOID BURING SUGAR. THE, PLACE A LID AND COOK OVER MEDIUM HEAT FOR 2-3 MINUTES TO WASH DOWN SUGAR CRYSTALS FROM SIDES OF PAN. ADD PEANUTS; COOK, STIR OCCASIONALLY, UNTIL MIXTURE REACHES HARD CRACK STAGE (300) REMOVE FROM HEAT. STIR IN BUTTER, VANILLA, SODA, AND SALT. WORK RAPIDLY AND POUR MIXTURE INTO A BUTTERED 15 X 10 X 1 INCH JELLYROLL PAN; SPREAD IN A THIN LAYER. LET COOK COMPLETELY; BREAK INTO PIECES. STIR IN AN AIRTIGHT CONTAINER. YIELD: ABOUT 2 LBS. PS YOU CAN ADD JALEPANO PEPPERS* FOR A SPICY BRITTLE.

I have this very same recipe from another source and it makes the BEST brittle. I have added cinnamon for a diff taste, try it.
