I used Italian turkey sausage, and turkey bacon. I also added 1/2 tsp hot pepper flakes.

Original recipe makes 4
1 1/2 cupsspicy sausage
2 mediumpotatoes; cut in half lengthwise and cut into 1/4 inch slices
3/4 cupOnions; diced
1/4 teaspoonSalt
1 1/2 teaspoonsgarlic; minced
2 cupskale leaves; cut in half, then sliced
2 tablespoonschicken base
1 quartWater
1/3 cupRice milk
2 tablespoonsButter
1/8 teaspoonPepper

Olive Gardens Zuppa Tuscana Preparation

1. If sausage is in links, take out of wrapper (or slice).

2. Cook ground sausage, until done. Cook onion over medium heat,

3. Add garlic to the onion, and cook 1 minute.

4. Add chicken base, water, salt, pepper and potatoes; simmer 15 minutes.

. Add sausage, kale and milk and butter.

. Simmer 4 minutes, then serve.

A very good soup. I ended up using frozen spinich instead of kale and it was still good and very easy to make.

Reply to sport1 about the rice milk.
Sorry it took me so long to reply. Rice Milk can be purchased at most health food stores, but any milk substitute - soy, almond, etc. should work. I have even used Silk soy creamer. I'm sure the restaurant probably uses cream or half and half, so it isn't quite as thick, but still tastes good.

What is Rice milk and where can you buy it. have lactose intolerant people to cook for so curious if this would be a good substitute for the (heavy) cream in other recipes.
