Spaghetti Western
Original recipe makes 4
| 1/2 lbwhole grain spaghetti |
| 1 tablespoonextra virgin olive oil |
| 1 mediumOnion; chopped |
| 1 red bell pepper; cored and chopped |
| 1 cloveGarlic; minced |
| 1 14.5-oz canblack beans; drained and rinsed |
| 1 14.5-oz canfire-roasted diced tomatoes |
| 1/4 tspliquid smoke |
| 1/4 tspred pepper flakes |
| 5 dashesWorchestershire sauce |
| 5 dashesTobasco sauce |
| 3 oztomato paste |
| 1/2 creduced-fat cheddar cheese; shredded |
| fresh Italian parsley leaves |
Spaghetti Western Preparation
Cook spaghetti according to package instructions in salted water. Meanwhile, sauté onions, bell pepper, and garlic in olive oil until peppers are softened. Add beans and tomatoes, bring to a simmer. Add smoke, pepper flakes, Worchestershire sauce, Tobasco, and tomato paste. Stir and simmer for 5 minutes. Serve sauce over pasta, topping with cheddar and parsley.
