Like a quiche, but more cheese than egg. Freezes and reheats very well.

Original recipe makes 7
1/2 cupbutter or margarine
3 Eggs
1 cupflour
1 cupmilk
1 teaspoonsalt
1 teaspoonbaking powder
1 poundMonterey Jack cheese; grated.
4 cupsfresh spinach; stemmed, washed and dried.
1 cupmushrooms; sliced (optional)

Spinach Frittata Preparation

Preheat oven to 350 degrees. Melt butter in a 7x11-inch baking dish. Beat eggs. Mix liquid ingredients into eggs. Mix salt, flour, and baking powder. Add salt, flour, baking powder, and mushrooms to liquid ingredients in large mixing bowl, blending well. Add spinach to mixture, a little at a time to ensure leaves evenly coated. Bake in oven for 40-45 minutes, until golden brown. Allow to cool.

Freezes and reheats really well. Great for lunches. I regularly end up cooking it longer than the recommended time and it takes a while to cool. [I posted this recipe.]
