This is one of the best winter comfort-foods!

"This soup was delicious! I added about 1/4-1/2 c. celery and about 3 Tbsp. sour cream along with 1 tsp. dry onion mix and herbs. When it came to letting to soup simmer, I left the soup on for about 4-5 hours. To serve I added grated old cheddar and bacon as a garnish. It turned out creamy and tender. Original recipe makes 10
4 mediumpotatoes; peeled and cubed
1 smallOnion; chopped
1 tspsalt
Pepper; to taste
1/2 stickButter
4 cupsmilk
1/2 Flour

Potato Soup Preparation

Barely cover potatoes and onions with water.

Add salt and simmer until potatoes are done - approximately 15-20 minutes.

Add the 4 cups of milk and slowly bring to a boil.

Make thickening (1/2 cup flour and warm water enough to make paste thickness) and add slowly to soup.

May need to use whisk if it is too lumpy.

Add pepper to taste.

Serve with grated cheese and crumbled bacon, if desired.

This is a lovely, comforting basic soup. Very filling, very cheap and really tasty. I also added some chopped celery and a sprig of rosemary while cooking and served the soup with hot buttered toast and a sprinkle of grated cheddar.
