Chop everything before doing anything!
Ground the almonds in a coffee grinder, or smash the almonds in a bag. Set aside.
Blend the onions, garlic, chilies, and ginger root together in a blender, but not for too long. (Leave some chunks in the mix)
Heat the olive oil in a large pan over medium heat.
Add onion mixture & bay leaves and stir for about 10 minutes.
Add the chicken to the pan and fry, turning constantly for 10-12 minutes.
Add all the spices & cook about 3 minutes until spices are well-absorbed in the chicken? Coriander, cumin, chili powder, turmeric, paprika, salt, and pepper.
Add 1/3 cup of water, stirring the chicken for another 5 minutes.
- The water will have reduced to a rich, thick sauce.
Add another 2/3 cup of water and bring to a boil
Reduce the heat, cover and simmer for 20 minutes.
Add three-quarters of the cilantro to the chicken and stir.
Blend the ground almonds with the cream in a blender to form a smooth paste.
Add the almond mix to the chicken, stir well.
Sprinkle with the remaining cilantro
