"I made this for my husband and I and it is absolutely delicious!!! The only issue I had was the fact that the recipe doesn't say how big of a package of elbow noodles to use. I used a one pound package and ended up throwing out some of the noodles and it was too dry because I used too much noodles. Still very tasty though!"

Ingredients

2 cups cottage cheese
1 cup sour cream
1 egg; beaten
1 teaspoon Salt
Garlic salt and freshly ground black pepper; to ta ste
2 cups extra-sharp cheddar cheese; shredded
1 cup Swiss cheese; shredded
1 package elbow macaroni; cooked and drained

Preparation

Preheat oven to 350° F.

In a large mixing bowl, combine cottage cheese, sour cream, egg, salt, garlic salt, and black pepper. Add cheddar and Swiss cheeses and blend well. Cook macaroni as directed on package and drain well.

Add cooked macaroni to cheese mixture and blend until well coated. Add macaroni mixture to a greased 2- or 2½-quart baking dish and bake, uncovered, for 25-30 minutes.

We loved this recipe but eliminated the garlic salt and added a minced japaleno pepper, we all loved the extra heat and the creamy cheese.

Unfortunately, this dish did not work well for my family. The different cheeses did not seem to meld well in the flavor category for us. Thanks for the new dish to try on my family.

This is my absolute favorite Mac n cheese recipe. When I first saw the ingredients I was a bit hesitant but it's amazing!
