Absolutely the best carrot cake ever, hands down!!!

"This is the best carrot cake recipe EVER! I made this for my mum today for mothers day and i was deciding between 2 recipes, and im glad i picked this! i was unsupervised in the kitchen and made it like it said but i only used 1 cup of veg oil and i used a sprinkling of nut meg. it says add half a cup of chopped nuts, use walnut. 2 cupsSugar
1 1/2 cupsVegetable oil
4 Eggs
2 cupsFlour
2 teaspoonsBaking Powder
2 teaspoonsBaking Soda
2 teaspoonsCinnamon
1 teaspoonSalt
3 cupsCarrots; Grated
1/2 cupChopped Nuts
FROSTING:
1/4 stickButter
6 oz.Cream Cheese
1 cupPowdered Sugar
2 tablespoonsVanilla

Grammy Sawtelle's Carrot Cake Preparation

Mix sugar, vegetable oil and eggs until a creamy consistency. Add in flour, baking powder, baking soda, cinnamon, salt, grated carrots and nuts. Mix well and pour into cake pan of your choice.

Bake at 350 for 40-45 minutes.

This is now known as my scrumptious carrot cake. People ask for it all the time. I add a little orange rind to the frosting and make double. Thank you, thank you

I made some changes to the cake's recipe and it was very good. I only added 1 and 1/2 cups of sugar and 1 cup of vegetable oil. And it was just right for me and my family. I tried the frosting on the recipe and it was kind of a miss. Too much vanilla was needed to be added on the recipe. Although i only added 1 tablespoons of vanilla(the recipe says 2 tablespoons), the flavour dominated the whole thing and the taste was strange. So for anyone who wants to try the frosting i recommend you to add only 2 teaspoons. But over all the recipe was goid and i would definitely make the cake again but maybe with a different frosting. Oh and i added crushed peanuts for the nuts and it taste really good!!Just slice the cake length wise and sprinkle the nuts on!!SOOO YUMMY!!

I forgot carrot cake was so good! I made the batter and icing in my ninja. Didn't have many dishes to clean and nobody could believe I made it from scratch. The ingredients are very simple also. Iwill def add this to my fangs.

Had to cook an additional 5 min. Used about 7 medium carrots. Think next time I'll spray the dish cuz my cake stuck a lil in the middle. Used 9x13 glass dish. Made the recipe for icing in the reviews. Perfect amount!

A good old-fashioned, bare bones, homemade carrot cake with rich cream cheese frosting. Made this as a 9-inch layer cake for my niece's birthday yesterday. It was devoured! The cake was really easy to make and turned out moist and delicious. It had just the right amount of sweetness and we liked the abundance of carrots. We used our own frosting recipe—combining 1 (8 oz.) pkg. cream cheese with 1/2 cup (1-stick) butter, 2 tsp. fresh lemon juice and 1 tsp. pure vanilla extract and beating at medium speed until light and fluffy. Added 3-4 cups of powdered sugar, a cup at a time, until the frosting reached the desired consistency, then beat on low until fluffy. Refrigerate the frosting for about 10 minutes before frosting cake. It was the perfect amount of icing for the layer cake.
