Very tasty!

"This was great and so easy! I substituted a few things. I used boneless skinless chicken breast, canned pinto beans, and regular tomato soup. Original recipe makes 4
1 smallFrozen corn; bag
1 12-oz canBlack beans; drained and rinsed
3 poundChicken thighs; cubed
Taco seasoning; to taste
1 12-oz canTomato ranchero soup; campbells
1 small jarSalsa
2 cupCheddar cheese; shredded

Crockpot Fiesta Chicken Preparation

Place cut up chicken in a bag and shake with taco seasoning until coated (extra good if you let sit overnight!)

Place in crockpot.

Cover iwth frozen corn and drained black beans.

Add a layer of tomato ranchero sauce and top with salsa.

Cook on low for 7-9hrs or on high for 3-4hrs.

Add a top layer of shredded cheddar and cook 5-10 minutes more until cheese is completely melted.

Serve over rice. Top with sour cream and guacamole if desired.

Notes

Probably excellent if you substitute canned nacho cheese soup for the ranchero soup and ommitted the cheddar. Haven't tried it yet.

my favorite thing ive made on here so far. super easy and delish! i omitted the corn and added on a couple spoonfuls of nacho cheese to add to the creaminess. a knock out!

Made it for the family tonight...sooo good! Had to make the tomato ranchero soup from scratch because that flavor was discontinued by campbells. But other wise... very tasty! I even forgot the cheese and still great!

This was very tasty! I used rotel tomatoes in place of the salsa and added some tomato sauce, green onions, garlic powder and black olives.

I couldn't find the ranchero tomato soup so I used regular tomato soup. The melted cheese on top is YummY!! I use spanish rice by Zatarans, but I always forget that the rice needs a can of diced tomatoes!! Love the recipe! I have had it twice and my hubby loves it, too.
