Oven Roasted Fingerling Potatoes... a great complement to any dinner menu. Great with fish, chicken, beef, and pork. Or even with sunny side eggs :)!
"Just made these tonight and they were AWESOME!! Thanks for the tip on using parchment paper to line my cookie sheet also!! Not a one stuck and they were gone in no time! I used garlic salt instead of regular salt and that was my only change to the recipe. They were nice and crisp on the outside and the inside was soft and fluffy! Oven Roasted Fingerling Potatoes with Rosemary Preparation
Toss first 4 ingredients together. Place in a shallow baking pan.
Sprinkle with rosemary. Bake in toaster oven at 450 degrees for 40-45 minutes. Turn once halfway during the baking time. Enjoy as a side dish.

Turned out great and were delicious! Might only cook for 35 min next time or use larger potatoes. Mine were small even before cutting in half. Cooked with Mediterranean baked salmon and steamed broccoli. (First time cooking with fingerling potatoes.)
