Oven Roasted Fingerling Potatoes... a great complement to any dinner menu. Great with fish, chicken, beef, and pork. Or even with sunny side eggs :)!

"Just made these tonight and they were AWESOME!! Thanks for the tip on using parchment paper to line my cookie sheet also!! Not a one stuck and they were gone in no time! I used garlic salt instead of regular salt and that was my only change to the recipe. They were nice and crisp on the outside and the inside was soft and fluffy! Original recipe makes 4
10 longfingerling potatoes; (up to 12) cut in half lengthwise
salt/pepper; to taste
1 1/2 tsppaprika
1 tbspolive oil
2 tsprosemary; roughly chopped

Oven Roasted Fingerling Potatoes with Rosemary Preparation

Toss first 4 ingredients together. Place in a shallow baking pan.

Sprinkle with rosemary. Bake in toaster oven at 450 degrees for 40-45 minutes. Turn once halfway during the baking time. Enjoy as a side dish.

    Delicious and easy to cook. 40 min is too long for small potatoes so judge based on size. I added shredded asiago cheese on top.

    Looks quick, simple, and tasty! Can't wait to try them! I have made simmilar potatoes in the past and haven't had very good luck with them. They always burn all over the pan (I use a cookie sheet) and it is a horrible clean up and the potatoes end up in shards! But I will give it another shot and see! Thanks for the great recipe!

    Use the bigger size fingerling potatoes or use the smaller ones but double the amount. Adjust seasoning to taste [I posted this recipe.]
