Super Ed's Rotel Dip

Out at the hunting camp, Ed, one of our hunting buddies, would make this dip after a morning hunt. We would goble it down and almost forget about lunch! Nowadays, I make this dip at just about every gathering we have. It's really a big hit with the guys.

| 32 ouncesVelvetta Cheese,; cubed |
| 1 10-oz canRotel Diced Tomatoes,; drained |
| 1 poundSausage or Hamburger |
| 1 mediumOnion,; chopped |
| 1 mediumBell pepper,; chopped |
| 2 stalksCelery,; chopped |
| 1 1/2 tablespoonsMexican Seasoning or Chili Powder |
| 1 giant bagTortilla chips |
Super Ed's Rotel Dip Preparation
In a large skillet, brown the sausage or hamburger until no longer pink. Drain off the fat. Add the chopped fresh vegetables to the meat and cook until soft. While meat is browning, add cubbed cheese to microwave safe container and nuke in one minute intervals until cheese is melted. Add Rotel tomatoes, meat and vegetable mixture, and seasoning to the cheese. Stir until smooth. Adjust seasonings. Serve hot with Tortilla Chips.
