2 fillets of Mahi Mahi; (from Trader Joe's)
Garlic powder
2 tablespoonsButter
0.5 cupOrange Juice
1 pinchsalt and pepper; to taste

Prep Mahi Mahi:

Add salt Mahi Mahi to taste

Add garlic powder to taste

Add black pepper to taste

Cook:

1. 2 tablespoons of butter into pre-heated pan

2. Cook Mahi Mahi about 3-4 min on each side

3. Try not to over cook or will be too dry.

4. Remove Mahi Mahi from pan.

Reduction:

1. Pour about 1/2 cup of Orange Juice into pan for reduction.

2. Stir continuously until thickens. Make sure you get the residue from the bottom of the pan.

3. Pour over Mahi Mahi.

4. Use reduction for added taste since the flavors of the fish will be combined with the tangy flavor of OJ.

    Excellent recipe. I used apple juice because I didn't have orange juice and it was amazing.

    I don't know if I did something wrong, but mine came out bland as can be... the OJ did little to nothing for me. It basically came out tasting like plain Mahi Mahi.

    Easy and wonderful. To keep mahi from drink soak in slightly salted cold water for a couple of hours. Careful of how much salt you season fish wig as soaking adds salt. Cook quickly as recipe says. Really great. Makes fish the star of the recipe.

    My wife and I liked this dish. I liked that is was easy to make and with very little effort, I created a meal that tasted great and looked spectacular.

    I would make this again. I'd add a bit more salt and pepper than the recipe calls for.
