Chipotle Smashed Sweet Potatoes

If you are tired of the marshmallow sweet potatoes during the holidays, this is a delicious savory alternative. Shared by chef Alton Brown on his Food Network program, Good Eats. This is now my favorite sweet potato recipe.

2 largesweet potatoes; peeled and cubed
2 tablespoonsunsalted butter
1 chipolte pepper canned in adobo sauce; chopped
1 teaspoonadobo sauce from the canned chipolte pepper
1/2 teaspoonSalt

Chipotle Smashed Sweet Potatoes Preparation

Put cubed potatoes into steamer basket and place steamer into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Add butter to potatoes and mash with potato masher. Add peppers, sauce, and salt and continue mashing to combine. Serve immediately.

I put in less of the chipotle pepper and sauce to dial down the heat. The mashed sweet potatoes where to die for. Nice heat with a nice smokey taste and sweetness.
