1. Bring a large port of salted water to a boil. Add pasta and cook for about 8 minutes, leave it al dente. Drain well and return to pot.
2. In a small saucepan over medium heat, melt 8 TBS of butter; stir into the macaroni.
3. In a large bowl, combine all the cheeses and mix well.
4. Preheat the oven to 350.
5. Add the half-and-half, 1 1/2 cups of cheese mixture, cubed processed cheese and eggs to the macaroni. Mix and season with salt and pepper. Transfer to a lightly greased deep 2 1/2 quart casserole dish. Sprinkle with the remaining cheese and 1 TBS of butter.
6. Bake in preheated oven for 35 minutes.

rose219 9 months agoThis was very good. My significant other doesn't like Velveeta, so I substituted it with Salsa Con Queso and also added tuna to it. I will definitely be making this again!
platinumdiva 10 months agoWow this is Mac and cheese! Rich and very buttery. I used all cheeses called for except subbed gouda for the Monterey Jack. It was incredible. I will make this again but will most likely cut the butter called for by a couple tablespoons. All in all great recipe.
dunechica 11 month agoBest mac and cheese ever! I added 2 ingredients which made this fantastic dish awesome!! Pepper jack cheese and topped it off with crushed pretzels tossed in melted butter!! Thank you for your yummy recipe!!

Whtdov 1 year agoGreat taste & easy to make! Even my husband couldn't get enough of it & he does not like Mac&cheese or pasta or cheese. Made it 2 years in a row for Thanksgiving & Christmas! Even if u just use Cheddar alone with velveeta it tastes great!
