| 1 tablespoonButter |
| 1 cupuncooked orzo; (rice-shaped pasta) |
| 1.25 cupchicken broth; (low sodium fat free) |
| 1.25 cupWater |
| 1.25 cupfresh Parmesan cheese; grated |
| 2 tablespoonsfresh basil; chopped |
| 0.25 teaspoonSalt |
| 0.25 teaspoonfresh ground pepper |
| 4 teaspoonspine nuts; toasted |
Meryl's "Good-thing-I-know-Meyers" Parmesan Orzo Preparation
1. Heat butter in a medium saucepan over medium heat. Add orzo, and cook 3 minutes, stirring constantly. Stir in broth and water; bring to a boil. Reduce heat; simmer until liquid is absorbed and orzo is done (about 15 minutes).
2. Remove orzo from heat; stir in cheese, basil, salt, and pepper. Sprinkle with pine nuts. Serve immediately.
