Original recipe makes 8
1 packageGreat Northern Beans
1 largeOnion; finely chopped
1 largePotato; diced
Salt and pepper; to taste - do not add salt until

Grandma's Navy Bean Soup Preparation

Rinse beans and sort to remove discolored or spotted beans. In large stock pot, cover beans with water and bring to a boil. Remove from heat and soak covered overnight.

In the morning - pour off water. Refill with new water, add ham bone, onion, and diced potato. Cook on low until beans are tender (may take all day).

Remove ham bone and take off any remaining ham. Add up to 2 cups of additional ham.

Let simmer for a minimum of an hour, stirring ocassionally. Season with salt and pepper to taste.
