Chicken Fajita Marinade
Original recipe makes 4
| 1 poundChicken |
| 1/3 cupAchiote Paste |
| 1/4 cupWhite Wine Vinegar |
| 1/4 cupOlive Oil |
| 1/4 cupOrange Juice; Freshly Squeezed |
| 1/4 cupPineapple Juice |
| 2 tablespoonsYellow Onion; Finely Diced |
| 1 teaspoonGarlic; Minced |
| 2 teaspoonsSalt |
| 1/4 teaspoonWhite Pepper |
| 1 Bay leaf |
Chicken Fajita Marinade Preparation
Place all the ingredients, execpt the bay leaf and chicken, in a blender and pulse until smooth. Add bay leaf and chicken. Let marinade for at least 5 hours, but no longer than 2 days.
