Chili Cheese Grits Piquant
This is one of the best grits dishes I have ever had. It's been a southern staple in my families house forever. Even if you think you don't like grits you're gonna love this.

| 3/4 cupsGrits; not instant |
| 6 tablespoonsButter |
| 6 ouncesVelveeta Cheese; cubed |
| 3 Jalapeno peppers; seeded and minced |
| 1 mediumRed bell pepper; chopped |
| 4 Green onions; chopped |
| 1 teaspoonSalt |
| 2 Eggs; slightly beaten |
Chili Cheese Grits Piquant Preparation
Preheat oven to 325 degrees.
Using some of the butter grease a 9x13 casserole.
Cook grits in water until done. Add butter and velveeta cheese, stirring until melted. Add jalapenos, red bell pepper, green onion and stir. Mix in eggs and salt. Pour into pan. Bake 45 minutes.
