Breaded Healthy Chicken Nuggets

This is a healthy version of an old favorite. Includes wheat germ and flax seed as part of breading.
"Came out very well and better than anything from the freezer isle. I stuck with the prescribed butter, but think experimenting with different oils would be a great way to change the flavor profile. | 3 skinless boneless chicken breasts |
| 1 cupItalian seasoned bread crumbs |
| 1/4 cupwheat ger m |
| 1/8 cupmilled flax seed |
| 1/2 cupParmesan cheese; grated |
| 1 teaspoonSalt |
| 1 teaspoondried thyme |
| 1 tablespoondried basil |
| 1/2 cupButter; melted |
Breaded Healthy Chicken Nuggets Preparation
Preheat oven to 400 degrees F (200 degrees C).
Cut chicken breasts into 1 1/2 inch size pieces. In a medium bowl, mix together the bread crumbs, wheat germ, flax seed, cheese, salt, thyme and basil. Mix well. Put melted butter/margarine in a bowl or dish for dipping.
Dip chicken pieces into the melted butter/margarine first, then coat with the breadcrumb mixture. Place well coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake in the preheated oven for 20 minutes.
