This is a healthy version of an old favorite. Includes wheat germ and flax seed as part of breading.

3 skinless boneless chicken breasts
1 cupItalian seasoned bread crumbs
1/4 cupwheat ger m
1/8 cupmilled flax seed
1/2 cupParmesan cheese; grated
1 teaspoonSalt
1 teaspoondried thyme
1 tablespoondried basil
1/2 cupButter; melted

Breaded Healthy Chicken Nuggets Preparation

Preheat oven to 400 degrees F (200 degrees C).

Cut chicken breasts into 1 1/2 inch size pieces. In a medium bowl, mix together the bread crumbs, wheat germ, flax seed, cheese, salt, thyme and basil. Mix well. Put melted butter/margarine in a bowl or dish for dipping.

Dip chicken pieces into the melted butter/margarine first, then coat with the breadcrumb mixture. Place well coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake in the preheated oven for 20 minutes.

Ran this recipe through my Weight Watchers calculator, and it ended up being 25 points. For one chicken breast. That's crazy.

Butter? I was shocked! To make mine even healthier I used Extra Virgin Olive Oil. I was undecided which would be better, eggs whites mixed with skim milk or olive oil...I chose the olive oil. The nuggets turned out great!

Butter and margarine are essentially fats like cooking oils. A tablespoon of ordinary butter contains twelve grams of fat, of which 8 grams (66%) are saturated fat. In addition, a serving of butter contains 33 mgs of cholesterol.

Saturated fat and cholesterol have been linked to increased levels of low density lipoproteins (LDLs)--the 'bad cholesterol.' Thus, compared to butter, a serving of olive oil contains much less saturated fat (only 2 grams) and NO cholesterol.
