Chinese Baked Spareribs
A messy but great version of Chinese style spareribs. These can be pretty spicy (based on the amount of tabasco sauce used). If spicy foods are a problem for you, try 1/2 t. to 1 t. of tabasco sauce. If you want your lips to tingle, try the recommended 2 t. More than this is taking your mouth and stomach into your own hands.

| 3 poundCountry-style pork spareribs; cut into serving pieces |
| 1/4 cupPrepared (brown) mustard |
| 1/4 cupLight molasses |
| 1/4 cupSoy sauce |
| 3 tablespoonsCider vinegar |
| 2 tablespoonsWorcestershire Sauce |
| 2 teaspoonsTabasco sauce |
Chinese Baked Spareribs Preparation
-Place the ribs in a shallow baking dish (13x9 in. pyrex dish works well for this amount of ribs).
-Combine remaining ingredients in a bowl and pour over ribs.
-Chill, covered, for 3 hours (or longer). (Overnight works well for this recipe.)
-Preheat oven to 350 degrees Fahrenheit.
-Bake ribs about 1and 1/2 hours or until tender and done.
-Baste frequently (at 22 minutes and 67 minutes into the cooking cycle.)
-Turn ribs once during baking (at 45 minutes into the cooking cycle.)
-When brown and crusty, serve at once.
-Makes 3 to 4 servings.
-Definitely finger food!!!
-Serve with lots of napkins or paper towels.
**Note: This recipe does not work well with "regular" spareribs; it needs the country-style to come out right. Also, beef spareribs don''t work well, either; stick with pork.
