For more than 30 years these have been a family favorite during the winter holidays as an appetizer, with brunch or a snack for just anytime you have an appetite for sausage and cheese.

3 cupsBisquick
1 poundSausage
8 ounceCheddar; shredded
1/4 cupWater

Mimi's Sausage (and Cheese) Balls Preparation

Preheat oven to 350. Mix ingredients thoroughly using no more than 1/4 cup of water (or milk). To mix the ingredients, I find it easiest to:

> Spread out the Bisquick into a very large bowl.

> Pinch off small bits of the sausage and distribute on the Bisquick.

> Loosely sift the ingredients together with your hands until the sausage is completely covered with the Bisquick and is no longer sticky.

> Spread the shredded cheese and mix thoroughly.

Sprinkle the water over the mixture and using your hands form into small balls to yield 24 to 30 servings. Place on a cookie sheet, spaced 1 to 2 inches apart . Bake 15 to 20 minutes or until browned. Best served warm, you can heat them up in a toaster oven or pop in the microwave for 10 to 15 seconds.

Notes

Try your own favorite sausage and sharp cheddar or cheese mixtures. I personally prefer mild sausage and the Kraft sharp cheddar/colby shredded mix.

    This recipe is a little bland. I used spicy Italian sausage. A breakfast sausage I think would add a little more oomph.
