Excellent

"The Brie is sliced in half like a sandwich with the preserves in between the two circular rounds, wrapping the full 'sandwich' in the puff pastry will keep one round side smooth and the opposite round side with the seam of puff pastry, this is what is meant by the 'seam side' you put face down :)" - Danielschefie

3 tablespoonsapricot preserves
2 tablespoonspecan; chopped
1/2 packagefrozen puff pastry sheet; thawed

Baked Brie Cheese Preparation

Preheat oven to 350. Lightly grease a cookie sheet.

Slice one wheel of Brie cheese in half so you have two circles of cheese. Spread apricot or peach preserves on half of one circle of brie. Spread chopped pecans and make a sandwich out of the two halves of Brie. Wrap the entire wheel of Brie with one sheet of puff pastry and flip the entire concoction onto the prepared cooking sheet with the seam on the bottom. Brush the pastry with the egg white.

Bake for 30 minutes or until the pastry is golden brown. Serve immediately.

Made this as an appetizer for a dinner party and it all went!! For a variation, try a layer of hot pepper jelly instead of the apricot jam.

Place a couple of small cuts in the top of the puff pastry. That should prevent it from splitting open.

This was really tasty, but really messy. How do you stop the pastry from splitting open while baking?

I got lost at flip onto the cookie shee with 'seam on the bottom'. If it's sliced like a sandwich, how can there be a seam on the bottom?
