Creamy salmon with baby spinach

An easy, delicious and tasty way to cook the salmon, perfect to be accompanied with rice.

"It was yummy. Actually I had a hard time with finding heavy cream here in Kauai where I live, so I used heavy whipping cream (without the whipping). And i didn't know how much salt to put, so I just salted the sauce to taste. I also added some honey on the salmon before adding the spinach topping, added a nice slight sweetness. But I think I might try this with coconut milk in place of cream."

Ingredients

400 grams salmon; fillets or steaks
300 ml cream 35%
3 cups baby spinach
2 green onions; (also known as scallions)
Salt and pepper

Preparation

Preheat the oven at 350 celsius degrees.

Slice the baby spinach and the green onions.

In a bowl, mix the baby spinach, the onions with the cream, the salt and the pepper.

Pour over the salmon, cover it and cook it in the oven for about 40 minutes.

Serve with rice.

Very nice but agree, needs more seasoning and a bit of garlic. Great basic recipe that can be adjusted according to taste x

Thank you for the recipe!! It was easy, quick and yummy! Also instead of onions I used garlic. And together with salmon I cooked asparagus.

I really enjoyed this recipe and I'm sure I'll make it again. It was a bit bland but I blame myself as I didn't put much salt or pepper. Next time I will use more seasoning and maybe even throw in some herbs.

very yummy, made 3 times already. I use a bit less cream and add garlic. and put oven on 180 degrees Celsius and it works well. always turns out yummy

This turned out very well! I use 1 cup of heavy cream it was a little soupy but that paired good with the rice.

I used half and half. It was a little too runny. Next time I will reduce the half and half and add some garlic. Very tasty!

Easy and nutritious. I followed the suggestions in this comments section and reduced the heavy cream to 1 cup. Pairs well with brown rice.
