So quick and easy! I just cleared out my fridge, threw all the veggies in my cast iron skillet and let them cook! Delicious!
This is one of my favorite ways to cook vegetables, especially in the colder months. I used carrot, red onion, potato, turnip and added 15-20 minutes for crispier edges.
Awesome way to cook veggies! We added a little Cajun spice and it was yummy!

Tried this last night but added a sprinkle of the Balsamic vinegar prior to roasting. Wife loved it , even went back for seconds.
My husband and I loved this. I used only squash, zucchini and onion, and added Italian seasoning. He usually grills veggies outside, but when it's so cold we'll do them in the oven from now on.
Yum! Delicious and healthy, too! Added a little balsamic vinegar to the olive oil and finished with a little grated Parmesan for a bit more flavor. Will definitely make again and again!
