"Light and delicious! I added some sun-dried tomatoes, substituted white wine for half of the chicken broth and left out the carrots cause hubby doesn't like them. I also used canned cooked chicken because that was all I had. Easy, tasty and healthy! We'll have this again."

Ingredients

2 tablespoon Olive oil; divided
2 Boneless chicken breast halves; cubed
1 Carrot; sliced diagonally into 1/4 inch pieces
10 ounce Frozen broccoli florets; thawed
2 cloves Garlic; minced
12 ounce Angel Hair Pasta
2/3 cup Chicken broth
1 teaspoon Dried basil
1/4 cup Parmesan cheese; grated

Preparation

1. Heat 1 tablespoon oil in a medium skillet over medium heat; add chicken. Cook, stirring, until chicken is cooked through, about 5 minutes. Remove from skillet and drain on paper towels.

2. Heat remaining oil in same skillet. Begin heating water for pasta. Add carrot to skillet; cook, stirring, for 4 minutes. Add broccoli and garlic to skillet; cook, stirring, for 2 minutes longer.

3. Cook pasta according to package directions. While pasta is cooking, add chicken broth, basil and Parmesan to skillet. Stir to combine. Return chicken to skillet. Reduce heat and simmer for 4 minutes.

4. Drain pasta. Place in a large serving bowl. Top with chicken and vegetable mixture. Serve immediately.

It was a little bland so we added some spices and extra Parmesan cheese and it was much better.

I used minced garlic and it added so much more flavor. serve with wine and fresh Italian bread for a light dinner.

Pretty good basic recipe. Very easy to make substitutions to account for taste.

Added 4 cloves of garlic instead of one and used whole wheat pasta. I freeze my home made chicken broth in 1 cup packages so I used a whole cup and let it cook down. Nice easy dinner for two.
