This traditional Cuban Lentil soup is thick and hearty. It can be served alone or with rice.

"This is an EXCELLENT soup. Not that much work at all for the flavor. The cuban flavors are really good, not overdone. It's now THE favorite Lentil soup in our house as deemed so by my husband! Usually I change recipes like crazy....Not this one, it's perfect like it is. I added carrots per the suggestion which I loved but I wont be changing anything! Also, thanks for a well written recipe. I appreciate that...I didnt have to ask questions or wonder about anything...cant wait to try your other recipes!!"

1 cupLentils; (Rinsed well)
1 tbspVinegar
1 mediumOnion; (Minced)
6 cupsof Water
1 cubeBeef or Chicken Bouillon
1 stalkCelery; (Minced)
2 Tomatoes; (Seeded and Chopped)
1 Potato; (Peeled and Diced)
3 Basil Leaves
0.5 tspOregano
0.25 cupWhite Wine
Bay Leaf
1 tspCumin
1 tspSalt
0.5 tspPepper
0.25 Green Bell Pepper; (Minced)
2 clovesGarlic; (Minced)
1 smallSpanish Chorizo; (Sliced)
1 smallSmoked Ham Shank; (or Bacon)
0.5 packetSazon Goya w/ Culantro and Annatto; (If Needed)

Potaje De Lentejas (Cuban Lentil Soup) Preparation

In a Med/Large Pot combine water and Lentils. Boil for 1 minute the reduce heat to low; simmer 15 minutes.

Add all remaining ingredients except Sazon and wine. Bring to a boil for 1 minute. Reduce heat to a simmer for 45 minutes.

Remove Bay leaf, Basil leaves, and Ham shank. Remove the meat from the shank and shred. Place ham shank meat back into pot. Add wine. Add Sazon if needed. Stir and cook for 5 more minutes.

(HINT: If you can not find a ham shank you can use some bacon and some cooking ham chopped or diced. You can also add carrots if you like. You can also just add salt and pepper if you like. The longer you let the soup rest and removed from heat the thinker it will become.)

Serve Over white rice or enjoy alone.

This is Really Good Soup! I made a Vegan version by adding Carrots and Liquid Smoke instead of the Ham shank and Chorizo. I will certainly be making this one again!

An absolutely delicious Cuban version of lentil soup that was thick and rich in both taste and texture. Undoubtedly one of the richest lentil soups that I have ever had the pleasure to taste (by quantity of rich ingredients and rich flavor). Well worth the effort that went into making it!
