My favorite pancake. Thin with lots of texture. And easy to add fruits & nuts for variations.

| 3/4 cupsoatmeal |
| 1 cupbuttermilk; (or 1 cup milk & 1 tbs vinegar) |
| 1/4 cupFlour |
| 1/2 tspbaking soda |
| 1/2 tspbaking powder |
| 1/4 tspSalt |
| 2 tbsbrown sugar |
| 1 egg; beaten |
| 1 tspvanilla |
| blueberries; (smaller berries are better) |
Blueberry Oatmeal Pancakes Preparation
Mix oatmeal & buttermilk and sit for 10 minutes.
Combine dry ingredients.
Mix egg & vanilla into oatmeal mixture
Combine dry & wet ingredients. Batter is very wet. Drop onto buttered griddle. Place blueberries on each pancake. Fry, flip, fry.
