My favorite pancake. Thin with lots of texture. And easy to add fruits & nuts for variations.

Original recipe makes 4
3/4 cupsoatmeal
1 cupbuttermilk; (or 1 cup milk & 1 tbs vinegar)
1/4 cupFlour
1/2 tspbaking soda
1/2 tspbaking powder
1/4 tspSalt
2 tbsbrown sugar
1 egg; beaten
1 tspvanilla
blueberries; (smaller berries are better)

Blueberry Oatmeal Pancakes Preparation

Mix oatmeal & buttermilk and sit for 10 minutes.

Combine dry ingredients.

Mix egg & vanilla into oatmeal mixture

Combine dry & wet ingredients. Batter is very wet. Drop onto buttered griddle. Place blueberries on each pancake. Fry, flip, fry.

    These pancakes are amazing!!! There is no oil,go figure.

    Pretty good pancakes and a nice change from the usual. I didn't think they were too runny- the oatmeal gives the batter some density. They were a little tough to flip in that the blueberries would roll off the top. Next time I think I'll mix the blueberries directly into the batter rather than placing them on top. Or else, I'll take care to keep the blueberries in the center of the pancake so they don't roll off the edge when flipped.

    Made these again this morning! Still not disappointed! I added a couple dashes of cinnamon to the batter and used sliced strawberries as well as blueberries, very good.

    Easy recipe! I didn't have blueberries but these were very tasty. I didn't have a problem flipping the pancakes but I kept them small.
