Tangy Chicken Drumsticks

"A heads up to those using this as a main dish for adults. The serving size listed is misleading. A serving size should be at least 2-3 legs per person and that's even with side veggies and bread. This is much like a recipe my mom made up when I was a kid. To follow her version more closely, I added ginger slices and a lot more garlic. This makes it more flavorful and more Chinese-style. I boiled cauliflower and cabbage on the side and they both go well dressed with the extra sauce from the chicken. " - valopy

3 poundsChicken drumsticks
1 cupHoney
2 tbspKetchup
2 tbspolive oil
1/2 CupSoy sauce
1 cloveGarlic; minced
salt and pepper; to taste

Caramelized Baked Chicken Preparation

Preheat oven to 375. Place the chicken legs in a 9x13 baking dish. Mix all ingredients in a bowl and pour evenly over chicken legs. Bake for approximately 1 hour.

**I use drumsticks but any type of chicken can be used.

    DO NOT COVER..My hubby thought he was helping and covered the dish which made it soupy and bland. I tried it again, uncovered, which gave it the flavorful carmelized 'glaze'. Definitely will do again.

    Added dijon mustard to the sauce. Nice. Easy quick to make. I also let it marinade for about hour or 2 in the sauce before putting in oven. Worked well. Used whole chicken cut into pieces.

    I made this for Father's Day dinner and my dad was upset I didn't have more chicken so good! I did however cook it on low heat for 2hours and it was falling off the bone just how my family likes it!

    I added some ginger powder to taste and slightly less ketchup. I also cooked it in a turbo broiler... it took about 50 minutes and i rotated it half way through. Turned out great.
