Apple Strudel Muffins

These are delicious and a family favorite here. Who can resist a muffin that tastes like apple pie for breakfast.. I have also made these using splenda sugar substitutes, and sunflower oil vs butter to reduce the calories a bit and make them a bit more heart healthy. They are just as good.

"I made a few changes, for the flour I used 1.5 cup GF flour mix & 1/2 cup almond meal. In place of one egg I used 1Tbsp ground flax meal& 3 Tbsp water. Subbed half the butter for 1/4 cup unsweetened applesauce plus 2-3 Tbsp applesauce to thin out the batter.. I tossed the chopped apple with cinnamon& added cinnamon to the topping. Very good! 2 cupsAll-purpose flour
1 teaspoonBaking Powder
1/2 teaspoonBaking soda
1/2 teaspoonSalt
1/2 cupButter
1 cupSugar
2 Eggs
1 1/4 teaspoonsVanilla
1 1/2 cupsapples; chopped
1/3 cupBrown sugar; packed
1 tablespoonAll-purpose flour
1/8 teaspoonGround cinnamon
1 tablespoonButter

Apple Strudel Muffins Preparation

DIRECTIONS

Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.

In a medium bowl, mix flour, baking powder, baking soda and salt.

In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.

In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.

Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

    A new family favorite! We added 1/2 cup chopped walnuts to the mix, and 1/4 cup finely chopped walnuts to the topping for extra crunch! It was the perfect and delicious way to start off our holiday mornings with a good cup of coffee!

    Very good! Great way to use apples from the orchard!!! Did add 1/4 c rice milk to loosen up batter, but didn't notice any difference in moisture so I'll skip the milk next time and try applesauce. Also used a small ice cream scooper to put batter in muffin tins--worked great!

    Absolutely delicious. Great for a student snack or for breakfast. Very quick and easy with minimal washing up!! We also snapped up two dairymilk bars into chunks instead of the apple. Fantastic choco version!!

    These were a big hit in my family. I used whole wheat flour and did add about 1/2 cup unsweetened applesauce to them, and they came out really well. My kids ask for them regularly.

    Delicious!I baked them in the oven in the air in 160celcius for 25 minutes.Next time I will use a bit less brown sugar on top.Thank you for the great recipe!
