These are delicious and a family favorite here. Who can resist a muffin that tastes like apple pie for breakfast.. I have also made these using splenda sugar substitutes, and sunflower oil vs butter to reduce the calories a bit and make them a bit more heart healthy. They are just as good.
"Just made these, and had one with some double cream, I cannot get across how lovely these muffins are, they are so light and fluffy, I've never made muffins before, but I will certainly make these again, I changed absolutely nothing of the recipe, they're perfect as they are, although I did have to convert the cups into grams as I'm in the UK. Beautiful, thanks for sharing it! "- Lisa230

Ddloza 2 months agoMade these couldn't believe how easy they where. I used olive oil instead of butter and put the apples in the blender instead of chopping (haha lazy I know). They turned out so yummy I had to bake a second batch they disappeared so quickly lol

gingerekholm 1 year agoVery good! Great way to use apples from the orchard!!! Did add 1/4 c rice milk to loosen up batter, but didn't notice any difference in moisture so I'll skip the milk next time and try applesauce. Also used a small ice cream scooper to put batter in muffin tins--worked great!
Mburkhart 1 year agoThese muffins are superb!!! Doubled the recipe and used freshly picked apples- AWESOME!

angelahollmanhappel 1 year agoThese were a big hit in my family. I used whole wheat flour and did add about 1/2 cup unsweetened applesauce to them, and they came out really well. My kids ask for them regularly.
lydiaccb 1 year agoSo good. Looking forward to adding pecans. Only change I made was adding some lemon peel and juice of 1/2 lemon. I forgot the streussel topping :-(
Geometricalrain 1 year agoI made a few changes, for the flour I used 1.5 cup GF flour mix & 1/2 cup almond meal. In place of one egg I used 1Tbsp ground flax meal& 3 Tbsp water. Subbed half the butter for 1/4 cup unsweetened applesauce plus 2-3 Tbsp applesauce to thin out the batter.. I tossed the chopped apple with cinnamon& added cinnamon to the topping. Very good!
