Apple Strudel Muffins
These are delicious and a family favorite here. Who can resist a muffin that tastes like apple pie for breakfast.. I have also made these using splenda sugar substitutes, and sunflower oil vs butter to reduce the calories a bit and make them a bit more heart healthy. They are just as good."I made a few changes, for the flour I used 1.5 cup GF flour mix & 1/2 cup almond meal. In place of one egg I used 1Tbsp ground flax meal& 3 Tbsp water. Subbed half the butter for 1/4 cup unsweetened applesauce plus 2-3 Tbsp applesauce to thin out the batter.. I tossed the chopped apple with cinnamon& added cinnamon to the topping. Very good! Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
In a medium bowl, mix flour, baking powder, baking soda and salt.
In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.
