| 1 poundchicken breasts; halved, skinned, and boned |
| 2 tablespoonsButter |
| 1 clovegarlic; pressed |
| 3 green onions; finely chopped |
| 1 tablespoonFlour |
| 1/2 cupheavy cream or half and half |
| 2 tablespoonsfresh parsley; chopped |
| 3/4 cupSwiss cheese; grated |
| 1/3 cupParmesan cheese; freshly grated |
| 1/2 teaspoonSalt |
| black pepper; Freshly ground, to taste |
| rice or pasta; Hot cooked |
Quick Saucy Chicken Preparation
Cut the chicken into thin strips.
Heat the butter in a heavy skillet. Add the chicken and stir constantly over moderate heat for about three minutes, or until chicken is firm and white. Add the garlic and onions and cook for two more minutes. Stir in the flour and cook for one minute, stirring constantly.
Add the cream, parsley, and cheeses and stir just until blended. Remove the pan from the heat as soon as the cream is hot and the cheese has melted. Do not let the mixture boil after adding the cream. The total cooking time is about 6 to 8 minutes. Season with salt and pepper and serve over hot rice or pasta. Garnish with additional chopped parsley or onion tops.
