Hearty Vegetable Stew

A thick and savory stew that can be made fully vegetarian by using vegetable broth instead of chicken broth. I adapted this from another veggie stew recipe on this site, eliminating ingredients I didn't like and adding others.

Ingredients
| 1 tbspButter |
| 1/3 yellow onion |
| 3 clovesgarlic |
| 1 largestalk celery |
| 1 largecarrot |
| 1 canchicken broth |
| 1 cantomato sauce |
| 0.75 canblack beans |
| 1 cupMorningstar soy "beef" crumbles |
| 1/2 packageH-E-B diced potatoes |
| 1/2 tspdried oregano |
| 1/2 tspblack pepper |
| 1/8 tspcelery salt |
| 2 bay leaves |
| 1 dashcayenne |
| 1 handfulparsley; chopped |
| 5 fresh basil leaves; chopped |
Hearty Vegetable Stew Preparation
Melt butter in stew pot. Saute onion and garlic for 1 minute. Add all other ingredients. Bring to a boil, then reduce heat and cover. Simmer for about 30 minutes or until potatoes are tender.
