This yummy vinaigrette is great for all salads! It's quick and easy and refrigerates very well!

Ingredients

1 tablespoon Extra Virgin Olive Oil
3/4 teaspoon Kosher Salt
1 teaspoon Dill; Fresh Chopped
1/4 teaspoon Garlic; Fresh Minced
Dijon Mustard
2 tablespoons Lemon Juice; Fresh Squeezed
1 teaspoon Pinot Grigio Vinegar
2 teaspoons Parsley; Fresh Chopped
1/4 teaspoon Black pepper
1/2 tsp red pepper flakes; crushed (optional)
1 c mozzarella cheese; grated
1/2 c Parmesan cheese; grated

Servings  

Preparation

Whisk together all ingredients except Olive oil. After all ingredients are combines slowly add in olive oil and whisk until lightly emulsified. Refrigerate and serve cold.

You can use any white wine vinegar you like or even champagne vinegar.
